Tried creating a new recipe today–Tabbouleh, a Lebanon salad. Seems quite zesty, light and a good way to get vegetables into the meal!
Some of the ingredients used, recipe below.
- 1 cup boiling water
- 1 cup bulgar
- 1/2 cup minced fresh mint leaves
- omatoes, diced
- cucumbers, seeded and diced
- 1.5 tablespoons olive oil
- lemon juice
- black pepper
In a large mixing bowl, pour the water over the cracked wheat and cover, let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped herbs and vegetables and toss with the mix. Combine the oil, lemon juice, black pepper to mixture and mix well. Chill. Serve and enjoy.
It’s delish! Had several helpings for dinner.
Added the tabbouleh as a side to my dinner of bacon omlette, chicken roll, crab meat & garbanzo beans!
I see the tabbouleh making a comeback for future meals!
On another note, bought some new plants for the home! Really brightens the home up & makes the place look cheerful!
